Fortuna Roman Chopped Salad

In honor of the ancient Goddess of Luck Fortuna, this week we introduce the Fortuna Chop, an Italian chopped salad. It’s hearty and wildly flavorful. Serve with crusty bread. It’s an entire meal.


Serves Eight

2 heads of Romaine lettuce, chopped

1 head Iceberg lettuce, chopped

(Or vice versa!)

1/2-pound salami, thin slices cut into quarters

8 ounces mozzarella cheese, shredded (or 10 ounces water mozzarella cubed)

16 (drained) ounces of canned garbanzo beans

Fortuna Chop Dressing

Toss lettuces, cheese, salami, garbanzos and dressing. Serve with abundanza.

Fortuna Chop Dressing

(To Taste)

1/2 cup Extra Virgin Olive Oil

3.5 tablespoons red wine vinegar

2 teaspoons dry mustard

3/4 teaspoon sea salts

3/4 teaspoon coarsely ground black pepper

3/4 cup parmesan grated cheese

Mix ingredients and enjoy!
